Eggplants with Mozzarella
Ingredients
- Eggplants 15 oz
- Passata Tomato Sauce 10 oz
- Melted Cheese 5 oz
- Parmesan Cheese to taste
- Chopped Sage Leaves ¼ glasses
- Olive Oil to taste
- Salt to taste
Step-by-Step Guide
Step 1
Cut the eggplants into pieces and sauté them in olive oil. Then, pat them dry with paper towels. Slice the mozzarella into thin rounds.
Step 2
In each of the 4 small dishes, place 2 pieces of eggplant topped with a slice of mozzarella, add a bit of chopped basil, and a generous amount of tomato paste. Repeat this layering process 5 times. Bake in a preheated oven at 340°F for about 10 minutes.
Step 3
How to serve: Add warm tomato sauce to the plates, placing the dish in the center. Garnish with a basil leaf and pieces of roasted eggplant.
