Eggplants with Meat
Ingredients
- Salt to taste
- Parsley 1 stalk
- Garlic 2 cloves
- White bread 0 oz
- Meat 5 oz
- Chicken Egg 1 piece
- Safflower Oil 1½ tablespoons
- Eggplants 6 pieces
Step-by-Step Guide
Step 1
Cut the eggplants lengthwise and chop the flesh with a knife. Salt them and place in a baking dish, drizzle with oil. Bake in an oven preheated to 355°F for 30 minutes until they become soft.
Step 2
Remove the eggplants from the oven, but do not turn it off. Let them cool slightly, then scoop out the flesh with a teaspoon, trying not to damage the skin. Remove the tough seeds. Chop the flesh and mix it with finely chopped meat (or ground meat) or ham. Add a lightly beaten egg, half of the bread crumbs, and finely chopped garlic and parsley. Sprinkle with the remaining crumbs and drizzle with the remaining oil.
Step 3
Return to the oven for 35 minutes, then place under the broiler for another 10 minutes. Serve immediately in the same dish.
