  • Eggplants 8 pieces
  • Goat cheese 15 oz
  • Buckwheat Groats 5 oz
  • Parsley 0 oz
  • Olive Oil 0 fl oz

Step-by-Step Guide

Step 1

Wash the eggplants, trim the ends to prevent them from bursting during roasting, and place them in an oven preheated to 390°F. Roast for twenty to thirty minutes, depending on the size of the eggplants. After the roasting time, the flesh should be completely ready to eat.

Step 2

Then, remove the eggplants, cut them in half lengthwise, scoop out the insides, and mix them with grated goat cheese, chopped parsley, honey, and a pinch of salt. Drizzle with olive oil and stuff the eggplant halves with this mixture.

Step 3

Place in the oven for another ten minutes. After that, remove and serve either as is or with a sauce made from one part balsamic vinegar, one part honey, four parts olive oil, a pinch of salt, and a pinch of pepper.
