Step-by-Step Guide
Step 1
Cut the eggplant lengthwise, making 6 mm slices without cutting all the way through. Salt it and let it sit for 5 minutes, then shake off the liquid that forms. Fill the gaps with a mixture of diced tomatoes, bell peppers, garlic, herbs, cheese, and bacon.
Step 2
Bake until done and golden brown in a preheated oven at 355°F.
