Eggplants stewed with peppers and tomatoes
Ingredients
- Eggplants 5 pieces
- Tomatoes 3 pieces
- Orange Bell Peppers 2 pieces
- Khmeli-suneli 1 tablespoon
- Ground coriander 1 tablespoon
- Garlic 1 clove
- Onion 1 piece
- Vegetable Oil 1 tablespoon
- Salt a pinch
- Sugar a pinch
Step-by-Step Guide
Step 1
Cut all the vegetables into strips.
Step 2
Sauté the eggplants in a small amount of oil for 10 minutes.
Step 3
Add all the vegetables except the garlic to the eggplants and stew for 40 minutes.
Step 4
Add salt and sugar to taste, along with all the spices and garlic.
