Ingredients
- Eggplants 10 oz
- Scallions 0 oz
- Parsley to taste
- Salt to taste
Step-by-Step Guide
Step 1
Wash the eggplants.
Step 2
Pat them dry.
Step 3
Skewer them and grill over hot coals (without flames).
Step 4
Allow the eggplants to cool slightly.
Step 5
Peel the skin off, place them on a plate, sprinkle with salt, and top with finely chopped parsley and green onions.
