  • Feta cheese 5 oz
  • Spanish onions 0 oz
  • Capers 0 oz
  • Cilantro 0 oz
  • Parsley 0 oz
  • Olive Oil 0 fl oz
  • Tomatoes 5 oz
  • Mild Chili Spice 0 oz
  • Garlic 0 oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

To prepare the tomato sauce, grate the tomato, chili, and garlic, then add 10 ml of olive oil, season with salt and pepper to taste, and mix well.

Step 2

Slice the eggplant lengthwise and bake in an oven preheated to 375°F until fully cooked.

Step 3

Make a slit in the soft inner part of the eggplant and fill it with the prepared tomato sauce. Top with chopped herbs, diced feta cheese, sliced red onion, and capers. Sprinkle with salt and pepper, and drizzle with olive oil.
