Eggplant Steaks
Ingredients
- Eggplants 1 piece
- Tomatoes 2 pieces
- Arugula 5 oz
- Vegetable Oil to taste
- Ricotta cheese 5 oz
- Olive Oil 4 tablespoons
- Garlic 1 clove
- Champagne Vinegar 1 tablespoon
- Kalamata olives 6 pieces
- Fresh basil leaves 2 tablespoons
Step-by-Step Guide
Step 1
Preheat the grill. Slice the eggplant into 4 thin pieces and brush with oil. Place on the grill, sprinkle with salt, and grill for 10 minutes until golden, flipping once.
Step 2
Place the tomato quarters on the grill, lightly brush with oil, and sprinkle with salt. Cook for 2 minutes, then transfer to a plate along with the eggplant. Let cool.
Step 3
On 4 serving plates, arrange the arugula leaves, then the eggplant, topped with tomatoes and pieces of bocconcini.
Step 4
In a small bowl, whisk together the oil, vinegar, and minced garlic. Add finely chopped olives and salt. Drizzle the sauce over the eggplant. Serve warm.
