Step-by-Step Guide
Step 1
Wash the eggplants and cut them lengthwise into thin slices. Sprinkle with salt and let sit for 5 minutes. After that, rinse again and dry with a paper towel.
Step 2
Heat vegetable oil in a wok. Fry the eggplant slices until golden brown, then place them on a rack to drain excess oil, and lay them on a paper towel to dry.
Step 3
To prepare the filling: in a mixing bowl, combine grated cheese and cottage cheese. Add finely chopped garlic, cilantro, and walnuts. Mix everything together, adding salt, pepper, and sweet paprika.
Step 4
On the slices of cooked eggplant, use a spoon to place the filling and roll them up. Garnish the finished dish with herbs and serve.
