Ingredients
- Eggplants 2 pieces
- Semi-soft cream cheese 5 oz
- Walnuts 5 oz
- Herbs 1 bunch
- Vegetable Oil 0 fl oz
- Pomegranate Seeds 0 oz
- Lemon-Pepper Mix to taste
- Salt to taste
Step-by-Step Guide
Step 1
Slice the eggplants lengthwise into pieces about 0.5 cm thick.
Step 2
Sprinkle the slices with salt and let them sit for 10–15 minutes.
Step 3
Chop the walnuts in a blender or on a fine grater.
Step 4
Combine the chopped walnuts, cream cheese, and finely chopped herbs.
Step 5
Add salt and pepper mix to taste.
Step 6
Mix until smooth.
Step 7
Fry the eggplants on both sides in vegetable oil until golden brown.
Step 8
Spoon the filling onto the edge of the eggplant.
Step 9
Roll the eggplants into rolls.
Step 10
Serve garnished with herbs and pomegranate seeds.
