Eggplant Rolls with Cheese and Garlic

Description
I use small eggplants, so I take 4 pieces. I do not peel the skin.
Ingredients
- Eggplants 4 pieces
- Aged gouda cheese 5 oz
- Garlic 1 clove
- Mayonnaise 5 oz
- Olive Oil to taste
- Salt to taste
Step-by-Step Guide
Step 1
Cut off the ends of the eggplants (but do not throw them away) from both sides so that the slices turn out even. Then slice them lengthwise into not very thin pieces, as they will shrink during baking.
Step 2
On a baking sheet lined with parchment paper and greased with oil, place the slices, sprinkle with salt, and brush with oil. Also place the ends and slices with the rounded side up. Put in a preheated oven at 355°F for 15–20 minutes.
Step 3
Meanwhile, prepare the filling. Grate the cheese, press the garlic into it, and add the mayonnaise.
Step 4
Remove the eggplants and let them cool, then chop the ends and rounded slices into a puree.
Step 5
Add the resulting puree to the prepared filling and mix thoroughly.
Step 6
When the filling is ready, take the slices, spread the filling on one side, and roll them into tubes.
