Eggplant Medallions
Ingredients
- Eggplants 2 pieces
- Veal 5 oz
- Onion 1 head
- Tomatoes 2 pieces
- Garlic 1 clove
- Salt to taste
- Vegetable Oil 0 fl oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the eggplant into 2 cm thick rounds. Use a spoon to scoop out part of the flesh to create an eggplant tartlet. Fry on both sides until almost cooked (so they don't lose their shape). Season with salt.
Step 2
Cut the veal into thin strips and sauté with the onion.
Step 3
Thinly slice the tomatoes, add them to the meat, and simmer until cooked. Season with garlic and spices.
Step 4
Fill the eggplant medallions with the meat mixture. Garnish with small cherry tomatoes.
