Step-by-Step Guide

Step 1

Slice the eggplants lengthwise, soak in cold water, and weigh down with a weight.

Step 2

Let sit for about 1 hour, then drain the water.

Step 3

Place the eggplants on a greased baking sheet.

Step 4

Finely chop the cleaned mushrooms, tomatoes, and onion, combine with the crushed cheese and minced garlic, add a little ketchup and mayonnaise, and mix.

Step 5

Spread the resulting mixture over the eggplants, season with salt and pepper to taste.

Step 6

Bake in a preheated oven at low heat for 40–50 minutes.
