Eggplant Caviar with Garlic

Description
Very delicious spread on bread. Can be eaten immediately or stored in a jar, served cold or hot.
Ingredients
- Eggplants 4 pieces
- Carrot 1 piece
- Garlic 6 cloves
- Salt to taste
- Tomatoes 2 pieces
Step-by-Step Guide
Step 1
Use a vegetable peeler to peel the eggplants and carrot.
Step 2
Grate the peeled vegetables on a fine grater and place them in a heated skillet with vegetable oil. Fry over medium heat until the vegetables turn into a homogeneous mass, stirring frequently to prevent burning.
Step 3
Pour boiling water over the tomatoes and remove their skins. Chop them very finely, preferably into a pulp (you can also grate them), so they blend into the mixture. Add to the eggplant-carrot mixture, mixing thoroughly to hide the traces of tomatoes. Simmer everything together for about 15 minutes.
Step 4
Garlic is needed not only for aroma but also for flavor, so add it at the very end, mix, and turn off the heat.
