Ingredients

  • Onion 1 head
  • Carrot 1 piece
  • Orange Bell Peppers 1 piece
  • Tomatoes 2 pieces
  • Eggplants 2 pieces
  • Vegetable Oil 2 tablespoons
  • Garlic 1 clove
  • Salt to taste
  • Sugar 3 tablespoons
  • Paprika to taste

Step-by-Step Guide

Step 1

Cut all the vegetables into medium-sized cubes.

Step 2

Place the chopped eggplants in a deep bowl, generously salt them, and cover with warm water to remove bitterness.

Step 3

Pour vegetable oil into a frying pan.

Step 4

Add the onion to the pan (fry for 5 minutes).

Step 5

Add the carrot and bell pepper to the onion and sauté for another 5 minutes.

Step 6

Add the eggplants, previously squeezed of water, along with the tomatoes.

Step 7

Cover and stew all the vegetables for 15 minutes.

Step 8

Add 1 tablespoon of salt, paprika, and 2 tablespoons of sugar.

Step 9

Stir and simmer until most of the moisture evaporates.
