Eggplant Appetizer with Tomatoes and Cheese Sauce

Description
The key is not to overdo it with oil in the pan. It should be just the right amount; otherwise, it will burn or be too greasy. It can be served hot or cold.
Ingredients
- Eggplants 2 pieces
- Cheese Spread 5 oz
- Tomatoes 4 pieces
- Garlic 4 heads
- Mayonnaise 3 tablespoons
- Salt to taste
- Herbs to taste
Step-by-Step Guide
Step 1
Slice the eggplants and tomatoes into round slices, as evenly as possible, not too thick.
Step 2
Prepare the cheese sauce by grating hard cheese (for those who like spicy dishes, Dutch cheese is preferable, but regular Russian cheese can also be used) on a fine grater, crushing the garlic cloves, mixing them together, and adding mayonnaise until a homogeneous mass is achieved (dried basil can also be added).
Step 3
Place a large frying pan over medium heat, heat sunflower oil (the oil should completely cover the surface of the pan), and fry the eggplant slices until golden brown.
Step 4
Place the fried eggplants on a large plate, sprinkle each slice with salt, add a teaspoon of cheese sauce, then a slice of tomato. Sprinkle with salt again, and garnish with finely chopped herbs (parsley or dill).
