Ingredients

  • Eggplants 15 oz
  • Tomatoes 2 pieces
  • Red Long Chili Peppers 1 piece
  • Passata Tomato Sauce 7 tablespoons
  • Onion 1 piece
  • Salt to taste

Step-by-Step Guide

Step 1

Sauté finely chopped onion in olive oil until golden brown. Add finely chopped red pepper and tomatoes cut into medium cubes. Sauté for another 5 minutes.

Step 2

Add cubed eggplant (2 pieces). Cover and simmer until partially cooked over medium heat.

Step 3

Reduce heat to low and add tomato paste and spices to taste (oregano works well).

Step 4

Simmer until fully cooked. Garnish with herbs.
