Eggplant Antipasti with Cauliflower

Description
The vegetable composition can vary. You can add broccoli or sweet potatoes, mushrooms. Date honey can be replaced with regular honey.
Ingredients
- Sweet Red Onion 2 pieces
- Garlic 5 cloves
- Young zucchini 2 pieces
- Olive Oil 10 fl oz
- Cauliflower 1 head
- Date honey 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Eggplants 1 piece
- Orange Bell Peppers 1 piece
Step-by-Step Guide
Step 1
Slice the eggplant into 1.5 cm rings, sprinkle with coarse salt, and let sit for 30 minutes. Rinse and dry with a paper towel.
Step 2
Chop all the vegetables into roughly equal-sized pieces (not finely). Leave the garlic in its skin.
Step 3
Mix the sauce ingredients (olive oil, honey, salt, pepper) and pour over the vegetables. Mix well with your hands.
Step 4
Transfer to a greased baking dish, cover tightly with foil, and place in a preheated oven at 355°F for 1 hour.
Step 5
Increase the temperature to 390°F, remove the foil, and bake for an additional 15–20 minutes, until the vegetables are cooked through.
Step 6
Serve hot or warm.
