- Antonovka apples 3 pieces
- Mustard Greens 0 oz
- Meyer Lemon Juice 0 fl oz
- Sugar 0 oz
- Salt 0 oz
- Vegetable Oil 5 fl oz
Step-by-Step Guide
Step 1
Before starting the other preparations, you need to place the vegetable oil in the refrigerator: if it is cold, the sauce will thicken more easily.
Step 2
Make a puree from Antonovka apples: wrap the apples in foil and bake them in the oven for 20-25 minutes, then remove the skin, core the apples, and blend them in a blender until smooth. Pass the mixture through a fine sieve.
Step 3
Weigh the puree – you will need 150 grams, the same amount as the butter. Add sugar, mustard, and lemon juice with salt to the apple puree, and blend with an immersion blender.
Step 4
Slowly drizzle in the chilled oil to prevent the mayonnaise from separating. Place it in the refrigerator – this will make it even thicker.
