Egg Yolk Bottarga
Ingredients
- Egg white 5 pieces
- Salt 5 oz
- Sugar 5 oz

Step 1
Mix the salt and sugar.
Step 2
Spread half of the mixture in a flat container, place the yolks at some distance from each other on top, cover completely with the remaining mixture, and leave at room temperature for 24 hours.
Step 3
After 24 hours, remove the yolks from the mixture, which will have absorbed all the moisture from the yolks. The yolks will become firm.
Step 4
Quickly rinse the yolks under running water and dry them on paper towels.
Step 5
Slice them into thin pieces.
