- Whole egg 3 pieces
- Dry White Wine 5 fl oz
- Lemon ¼ piece
- Powdered Sugar 3 tablespoons
Step-by-Step Guide
Step 1
Whisk the egg yolks with powdered sugar, add the zest from the lemon, and while pouring in the wine, blend the mixture in a blender.
Step 2
Place the pot with the mixture over low heat or in a water bath and continue whisking until thickened; do not allow it to boil.
Step 3
After cooking, remove the lemon zest and add lemon juice to the finished sauce to taste.
