Ingredients

  • Wheat Flour 1 cup
  • Water 0 fl oz
  • Chicken Egg 1 piece
  • Butter 3 tablespoons
  • Veal Liver 15 oz
  • Onion 3 heads
  • Ground Black Pepper to taste
  • Salt to taste
  • Parsley to taste
  • Dill to taste

Step-by-Step Guide

Step 1

Sift the flour onto a table, form a mound, make a well in the center, pour in the beaten raw egg, add water, and knead the dough (not too stiff). Sprinkle with flour, cover with a towel, and let it rest for 30–40 minutes.

Step 2

Clean the liver from bile ducts, remove the film, finely chop, and sauté in butter with one finely chopped onion until cooked.

Step 3

Pass the cooled liver through a meat grinder, add salt, pepper, chopped herbs, and the remaining finely chopped onion sautéed in butter, and mix well.

Step 4

Roll out the dough into a thin layer, cut out round circles with a glass. Place a teaspoon of the prepared filling on each circle, brush the edges of the dough with beaten raw egg, and seal.

Step 5

Drop the dumplings into salted boiling water and cook until they float to the surface. Drain in a colander or sieve to remove excess water, and serve.
