Step-by-Step Guide
Step 1
Prepare all the ingredients.

Grind the Sichuan pepper and fennel seeds in a mortar and pestle or a coffee grinder.

Mix the sugar, salt, and spices.
Step 4
Make shallow crosswise cuts in the skin of the duck breasts, being careful not to cut through to the meat.

Pour one-third of the dry mixture into a glass or ceramic container of suitable size.

Place the duck on the spices with the skin side up.
