Dandelion Greens with Garlic and Hot Pepper
Ingredients
- Dandelion leaves 20 oz
- Onion 5 oz
- Garlic 1 clove
- Dried Chili Pepper 1 piece
- Salt to taste
- Vegetable Oil ¼ cup
- Ground Black Pepper to taste
- Grated Pecorino Pepato Cheese to taste
Step-by-Step Guide
Step 1
Cut the roots off the dandelions. Rinse the leaves in salted water. Cut into medium pieces.
Step 2
Boil the leaves in salted boiling water until soft, about 10 minutes.
Step 3
Meanwhile, in a skillet, sauté the finely chopped onion and minced chili in vegetable oil, removing the seeds.
Step 4
Drain the dandelions, add them to the skillet, season with salt and pepper. Stir and sprinkle with Parmesan. Serve immediately.
