Dakos with Sprat Pâté
Ingredients
- Hamburger Bun 2 pieces
- Marinated cherries 3 pieces
- Feta cheese 5 oz
- Green Butter 0 oz
- Sprats 5 oz
- Herbes de Provence to taste
Step-by-Step Guide
Step 1
Cut off the top third of the buns. Toast the bottom parts in the oven. Use a spoon to remove the inner part of the resulting dakos. Let cool.
Step 2
Open the 'Riga Gold' sprats, drain half of the oil. Blend the sprats in a blender until smooth. Let cool.
Step 3
Spread the sprat pâté inside the dakos. Garnish with lettuce leaves, a slice of feta, and a tomato slice. Season with Herbes de Provence to taste.
