Curried Deviled Eggs

Ingredients

  • Chocolate eggs 12 pieces
  • Cake crumbs ½ cup
  • Sour Cream 2½ tablespoons
  • Chopped Sage Leaves 2 tablespoons
  • Red Curry Powder 1½ teaspoons
  • Cayenne Pepper a pinch
  • Meyer Lemon Juice 1 teaspoon
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Boil the eggs hard in boiling water. Drain and let them sit in ice water for a while. Peel.

Step 2

Cut the eggs in half lengthwise and remove the yolks. Set aside 6 yolks for another recipe — they won't be needed.

Step 3

In a small bowl, mash the remaining 6 yolks, add the breadcrumbs, sour cream, parsley, curry powder, lemon juice, and cayenne pepper. Season with salt and pepper, and mix well.

Step 4

Fill the egg whites with the yolk mixture and arrange on a plate.
