- Wasabi 1 tablespoon
- Cucumbers 20 oz
- Water ½ spoons
- Rice Vinegar for Sushi 2 spoons
- Sugar 1 tablespoon
- Soy Sauce ¼ spoons

Step 1
Thinly slice the cucumbers crosswise using a mandoline, grater, or a steady hand with a knife. Mix with one teaspoon of salt and let them drain in a colander for fifteen minutes. Rinse the cucumbers under cold water, then squeeze out any excess moisture with your hands. Pat them dry to ensure they are completely dry.
Step 2
Mix the wasabi with vinegar, sugar, and soy sauce, whisking until the sugar dissolves. Add the cucumbers and mix well.
