Crushed Cucumbers with Cilantro and Cashews

Ingredients
- Cucumbers 20 oz
- Roasted Peanuts 5 oz
- Soy Sauce 0 fl oz
- Sugar 0 oz
- Ground coriander to taste
- Garlic 4 cloves
- Rice Vinegar for Sushi 0 fl oz
- Sesame Oil 0 fl oz
- Vegetable Oil 0 fl oz
Step-by-Step Guide
Step 1
Slice the cucumbers in half lengthwise, place them cut side down on a cutting board, and firmly pound them with the flat side of a knife.
Step 2
Cut the cucumbers into sticks about 3 cm long.
Step 3
Finely chop the garlic and roughly chop the cilantro. Mix the cilantro and garlic with the cucumbers and transfer to a serving dish.
Step 4
For the sauce, combine soy sauce, chili oil, sesame oil, vinegar, and sugar.
Step 5
Add the cashew nuts to the salad, dress with the sauce, and toss.
