Crostini with Roasted Bell Peppers

Ingredients

  • Bell Peppers 4 pieces
  • Garlic 2 cloves
  • Rosemary 1 sprig
  • Extra virgin olive oil 1 tablespoon
  • Country Bread 8 slices

Step-by-Step Guide

Step 1

Preheat the oven to 200 °C (400 °F).

Step 2

Cut the peppers in half, remove the seeds and white membranes.

Step 3

Line a baking sheet with parchment paper.

Step 4

Place the peppers cut side up on the baking sheet. Roast in the oven for 20–30 minutes.

Step 5

When the skin of the peppers darkens and bubbles, remove the baking sheet from the oven and transfer the peppers to a plastic bag. Tie it and let the peppers sit for 15 minutes. Then remove and peel off the skin.

Step 6

Dice the still warm peppers.

Step 7

Sprinkle with finely chopped garlic and rosemary leaves. Drizzle with olive oil and let cool.

Step 8

Toast the bread in a toaster, top with the peppers, and serve.
