Ingredients

  • Olive Oil 2 tablespoons
  • French Baguette ½ piece
  • Garlic 1 head
  • Eggplants 1 piece
  • Fresh Mint 0 oz
  • Goat cheese 0 oz
  • Salt to taste
  • Ground Black Pepper to taste
  • Balsamic Vinegar 1 tablespoon

Step-by-Step Guide

Step 1

Preheat the oven to 355°F. Dip the baguette slices in olive oil on both sides and toast in the oven until the bread is crispy (about 10 minutes). Cut the garlic in half and rub each crostini with it.

Step 2

Slice the eggplant into 5 mm thick rounds. Brush with olive oil and cook in the oven on grill mode until the eggplant is soft.

Step 3

Once the eggplant is ready, cut the rounds in half or into quarters and transfer to a bowl. Add the remaining oil, chopped mint, and balsamic vinegar. Mix and add salt and pepper.

Step 4

Spread goat cheese on the crostini, top with eggplant, and serve.
