Crostini with Crab Salad and Olive Oil
Ingredients
- Crab Meat 15 oz
- Olive Oil ½ cup
- Chives 1 tablespoon
- Orange Bell Peppers 1 piece
- Fresh basil leaves 1 tablespoon
- Lemon 1 piece
- Coarse Salt to taste
- Ground Black Pepper to taste
- Garlic 3 cloves
- French Baguette 1 piece
- Salted Butter 5 tablespoons
Step-by-Step Guide
Step 1
In a large skillet, melt the butter and toast the sliced bread on both sides until golden brown. While the bread is hot, rub it with the garlic cloves.
Step 2
Preheat the grill and roast the large pieces of bell pepper until golden brown. Transfer to a bag and cool. Peel off the skin and cut into small cubes.
Step 3
In a bowl, combine the crab meat, roasted pepper, chopped chives, and basil, along with the juice and zest of the lemon. Mix well, season with salt and pepper.
Step 4
Top each crostini with 1 tablespoon of crab salad and drizzle with olive oil.
