Description
The favorite of French King Charles VII, Agnes Sorel, died from mercury poisoning. According to some accounts, it was murder, while others suggest it was due to cosmetic misuse. After Agnes, three children were left behind along with a culinary legacy that has survived to this day. This legacy included mushrooms, chicken, veal or beef tongue, and vinegar. The same basic ingredients—chicken, tongue, mushrooms, and vinegar—can be used for making soups, preparing stews, and other culinary creations. Other types of mushrooms can replace the champignons, and the meat component can vary as well. For example, in high culinary practice, the name Agnes Sorel is often associated with guinea fowl meat combined with ox tongue and black truffles or morels.

Step-by-Step Guide
Step 1
Sauté the diced mushrooms, cooked chicken fillet, and veal tongue in butter. Drizzle the contents of the pan with vinegar, season with salt and pepper, and simmer for a couple of minutes.
Step 2
After that, pour the dish with lightly beaten eggs, season with salt and pepper, and add a pinch of sugar in homeopathic doses, then cook on low heat with the lid on until done.

Warm the croissants in the microwave, oven, or in a dry skillet, cut off the tops, and fill them with omelet.
