- Beetroot 1 piece
- Carrot 1 piece
- Garlic 1 head
- Water 0 qt
- Sugar ½ glasses
- Coarse Salt 2 spoons
- Mild Chili Spice 1 piece
- 9% Vinegar 1 glass
Step-by-Step Guide
Step 1
Cut the cabbage into pieces as you like (the original specifies large chunks). Chop the raw beetroot, grate the carrot on a coarse grater, and finely chop the chili pepper and garlic. Mix everything together. Add a few whole allspice berries. Pack the mixture tightly into a jar and pour in the brine.
Step 2
For the brine, pour in water, add salt and sugar, and bring to a boil. Turn off the heat. Add vinegar.
Step 3
Seal the jar with a lid and leave it at room temperature. The cabbage will be ready in 24 hours. Store it in the refrigerator.
