
Creamy Shrimp Sauce with Mint

Description
The sauce pairs well with pasta, boiled potatoes, and rice. If left in the refrigerator overnight, the sauce will thicken and can be spread on bread or served as a dip for chips (crackers).
Ingredients
- Peeled Cooked Shrimp 15 oz
- Cream 22% 15 fl oz
- Fresh Mint 0 oz
- Roquefort cheese 5 oz
Step-by-Step Guide
Step 1
Boil the shrimp until cooked, then drain the water. Chop about half (a little less) into medium pieces, and place the rest in a blender.
Step 2
If you have an immersion blender, chop the mint separately first.
Step 3
Add the cream, mint, cheese (you can use any spicy cheese or even feta instead of Roquefort), and the shrimp to a bowl (or blender) and blend until smooth. If you prefer a thinner sauce, you can add more cream (cream can be replaced with whole milk).
Step 4
Add the previously chopped shrimp to the sauce.
