Creamy Pasta with Vegetables
Ingredients
- Penne Pasta 10 oz
- Broccoli florets 5 oz
- Zucchini 2 pieces
- Olive Oil 1 tablespoon
- Cream Cheese 5 oz
- Grated Parmesan cheese 0 oz
- Lemon Zest 1 tablespoon
- Lemon Juice 1 tablespoon
- Basil to taste
- Sugar Snap Peas 5 oz
Step-by-Step Guide
Step 1
Cook the pasta according to the package instructions. Three minutes before it's done, add the broccoli and peas. Drain the water.
Step 2
Meanwhile, sauté the zucchini over low heat for 7-8 minutes until pale golden. When the pasta is ready, add 6 tablespoons of water from the pot, the Parmesan cheese, lemon zest, and half of the lemon juice along with the spices to the zucchini. Stir to create a smooth sauce.
Step 3
Combine the pasta with the vegetables, add basil, and the remaining lemon juice. Add spices to taste.
