Creamy Parsley with Orange, Ginger, and Mint Aroma
Ingredients
- Parsley 30 oz
- Shallot ½ piece
- Salted Butter 1 tablespoon
- Garlic 1 clove
- Ginger 20 oz
- 33% Cream ¼ cup
- Crème fraîche 3 tablespoons
- Orange zest 2 pieces
- Fresh Mint 1 stem
Step-by-Step Guide
Step 1
Trim the stems from the parsley and place it in a pot of boiling salted water for 20 seconds. Then quickly transfer it to ice water to stop the cooking. Pat dry with a paper towel.
Step 2
Melt the butter in a small skillet over medium heat and sauté the finely chopped shallot, unpeeled but slightly crushed garlic, and ginger, stirring constantly, until softened, about 3-4 minutes.
Step 3
Add the cream, crème fraîche, and zest, and simmer, stirring, for 4 minutes. Then add the mint and remove from heat. Let it sit uncovered for 2 minutes, then remove the garlic, zest, ginger, and mint.
Step 4
Return the sauce to the heat and add the parsley. Toss with a fork, season with salt and pepper, and cook until heated through, about 2 minutes.
