Creamy Mashed Potatoes and Parsnips
Ingredients
- Salad Potatoes 5 lbs
- Parsnip 30 oz
- Butter 2 tablespoons
- Cream 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Ground Nutmeg to taste
- Chopped Sage Leaves 2 tablespoons
Step-by-Step Guide
Step 1
Peel the potatoes and cut them into small pieces. Place them in a pot and cover with cold water. Bring to a boil, add salt, and cook for 5 minutes. Add the chopped parsnip and cook for another 15-20 minutes until the vegetables are soft. Drain and return to the pot.
Step 2
Place the pot over low heat and lightly dry the vegetables. Add the butter, cream, salt, pepper, and nutmeg (to your taste, if desired). Mash everything with a potato masher until smooth and stir in the parsley. Serve hot.
