Creamy Lemon Fettuccine with Peas and Broccoli
Ingredients
- Butter 1 tablespoon
- Onion 1 piece
- Heavy cream ¼ cup
- Meyer Lemon Juice 3 tablespoons
- Broccoli 1 head
- Hard Cheese 0 oz
- Frozen green bean pods 1½ cups
- Fettuccine Pasta 10 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In boiling salted water, add the broccoli florets and cook for 2–3 minutes. Use a slotted spoon to remove the broccoli and cook the pasta in the same water until al dente.
Step 2
In a skillet, sauté the onion in butter over medium heat for 3–4 minutes. Add the peas, broccoli, cream, and lemon juice. Stir well.
Step 3
Reduce the heat and cook for 3–4 minutes. If the cream starts to boil, turn off the heat. Season with pepper. If the pasta is ready, add the grated cheese to the sauce and stir until it melts.
Step 4
Remove from heat, plate the pasta, top with the sauce and vegetables. Grate additional cheese on top.
