Ingredients
- Milk 15 fl oz
- Onion 1 head
- Garlic 5 cloves
- Green peppercorns 5 pieces
- Bay leaf 1 piece
- White bread 5 oz
- Olive Oil 0 fl oz
- Red Wine Vinegar 1 tablespoon
- Mint Leaves 0 oz
- Water 3 tablespoons
Step-by-Step Guide
Step 1
In a saucepan, combine the milk, finely chopped onion, garlic cloves, black pepper, and bay leaf, and place over low heat. Bring to a boil and remove from heat. Let it sit for 30 minutes, then strain through a sieve.
Step 2
Remove the crust from the bread and cut it into small cubes. Transfer to a blender and add the milk, olive oil, and vinegar. Blend until smooth.
Step 3
Transfer to a small bowl and add the finely chopped mint. Gradually add water until you achieve a thick cream consistency. Season with salt and pepper.
