- Kefir 0 qt
- Ocean salt to taste
- Herbs to taste
Step-by-Step Guide
Step 1
Freeze the kefir. Then take it out of the freezer and let it slightly thaw for 15 minutes.
Step 2
Line a colander with two layers of cheesecloth.
Step 3
Cut the bottle, remove the frozen kefir, and transfer it to the cheesecloth.
Step 4
Wait for it to fully thaw. This usually takes about 8–9 hours.
Step 5
Gently squeeze out the excess liquid.
Step 6
Transfer to a convenient storage container.
Step 7
Grind the salt in a coffee grinder until it becomes powder.
Step 8
Salt the mixture and stir.
Step 9
Add the blue cheese. Mix thoroughly.
Step 10
To serve, transfer to a sauceboat and garnish with a sprig of herbs.
