Ingredients
- Crayfish 10 pieces
- Butter 5 oz
Step-by-Step Guide
Step 1
Boil the crayfish in salted water, cool them down, and extract the meat from the claws and tails.
Step 2
Remove the eyes from the shells, discard the tails and legs.
Step 3
Thoroughly clean the shells from the insides, finely crush in a mortar, mix with the butter, sauté briefly, add 2–3 cups of water, bring to a boil, strain through a cloth bag, cool in the refrigerator so that the oil that rises to the surface can be easily removed.
