Cranberry, Pear, and Ginger Chutney
Ingredients
- Apple Cider Vinegar 2 cups
- Onion 10 oz
- Grated Ginger Root 0 oz
- Orange zest 2½ teaspoons
- Citrus Zest Mix 2½ teaspoons
- Cinnamon 1 piece
- Chili Flakes ½ teaspoon
- Ground clove ¼ teaspoon
- Dried cranberries with sugar 10 oz
- Brown Sugar 1¼ cups
- Pears 20 oz
Step-by-Step Guide
Step 1
Combine the vinegar, finely chopped onion, zests, broken cinnamon stick, red pepper flakes, and cloves in a small saucepan. Bring to a boil and simmer until the volume is reduced to 1.5 cups, about 10 minutes.
Step 2
Add the cranberries, sugar, and diced pears. Stir until the sugar dissolves. Reduce the heat, cover, and cook until the pears are soft, about 30 minutes. Remove from heat and take out the cinnamon stick.
Step 3
Mash the mixture with a potato masher, transfer to a bowl, and cool.
