Cranberry Chutney with Ginger
Ingredients
- Olive Oil 1 tablespoon
- Shallot 0 oz
- Dried cranberries with sugar 10 oz
- Grated Ginger Root 1 tablespoon
- Sugar 1 cup
- Red Wine Vinegar 2 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a saucepan, heat the olive oil over medium heat. Add the chopped shallot and ginger and sauté until the onion is soft, stirring for 5 minutes.
Step 2
Add the cranberries, sugar, vinegar, and 1 cup of water. Bring to a boil, reduce the heat, and simmer, stirring, until the berries start to burst, about 10–15 minutes.
Step 3
Season with salt and pepper. Let cool.
