
Cranberry-Cherry Sauce

Description
This is a great sauce for smoked and roasted duck and ham.
Ingredients
- Lime 1 piece
- Concentrated Cranberry Juice 1½ cups
- Dried cranberries with sugar 1½ cups
- Ground dried cherries 1 cup
- Dried cranberries with sugar 0 oz
- Cinnamon 1 piece
- Fruit Jelly 1 cup
- Coarse Salt a pinch
- Ground clove ¼ teaspoon
Step-by-Step Guide
Step 1
Grate 1.5 teaspoons of lime zest. Cut the skin and white pith from the lime and carefully cut out the segments over a bowl with a sharp knife.
Step 2
In a saucepan, bring the cranberry juice to a boil. Add the lime segments, fresh cranberries, cherries, dried cranberries, cinnamon, and allspice. Bring to a boil again. Slightly reduce the heat and simmer for about 8 minutes, until the mixture thickens slightly.
Step 3
Add the jelly and cook for about 2 minutes, until the jelly melts.
Step 4
Remove from heat and add the lime zest and salt. Transfer to a bowl, cover, and refrigerate for 4 hours.
Step 5
Before serving, remove the cinnamon stick.
