Couscous with Vegetables, Orange, and Nuts
Ingredients
- Couscous 10 oz
- Water 10 fl oz
- Olive Oil 3 tablespoons
- Courgette 1 piece
- Eggplants 1 piece
- Potato 1 piece
- Orange zest 1 tablespoon
- Chopped almonds 2 tablespoons
- Macadamia Nuts 2 tablespoons
- Salt to taste
- Vegetable Oil 3 tablespoons
Step-by-Step Guide
Step 1
Boil a quarter liter of water in a pot. Add salt. Add 3 tablespoons of olive oil. Remove from heat.
Step 2
Pour the couscous into the pot and mix well.
Step 3
Finely chop the zucchini and eggplant (into half-centimeter cubes), sauté in vegetable oil. Transfer to the pot with couscous.
Step 4
Dice the tomato, sauté in vegetable oil, and transfer to the pot.
Step 5
Finely chop the nuts and the zest of half an orange, and transfer to the pot.
Step 6
Mix everything well. Serve hot or cold.
