Couscous with Sun-Dried Tomatoes, Mushrooms, and Nuts

Description
The mushrooms I used are shimeji (Chinese mushrooms), but you can use any that you like. Spices: grind cumin and thyme in a mortar. You can also add ginger and nutmeg.
Ingredients
- Fresh Mushrooms 5 oz
- Couscous 1 cup
- Pistachios 2 teaspoons
- Pistachios 1 teaspoon
- Olive Oil 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
- Sun-Dried Tomatoes 3 pieces
Step-by-Step Guide
Step 1
Prepare the couscous according to the video tutorial on the website eda.ru.
Step 2
Steam the sun-dried tomatoes for 10 minutes, then chop finely.
Step 3
Slice the mushrooms and sauté them in a small amount of oil for 7–10 minutes.
Step 4
Add the mixture of mushrooms and tomatoes to the couscous.
Step 5
Sprinkle with pistachios and pine nuts, then mix.
