Breakfasts • European
Description
Cottage cheese pancakes with raisins are a delightful treat that can be enjoyed for breakfast or as a snack. These fluffy pancakes are made with fresh cottage cheese, eggs, flour, and sweet raisins, then pan-fried until golden brown. Serve them warm with a dollop of sour cream or a drizzle of honey for an extra touch of sweetness.
Ingredients
- Wheat Flour 3 spoons
- Cottage cheese 20 oz
- Sugar 2 spoons
- Salt to taste
- Raisins 1½ spoons
- Sour Cream 1 tablespoon
- Activated Baking Soda a pinch
Step-by-Step Guide
Step 1
The cottage cheese should be low-fat and not too runny. If the cottage cheese is a bit dry, add a spoonful of sour cream. In a bowl, mix the cottage cheese, sugar (don’t add too much sugar, as the syrniki will burn while frying), raisins, salt, a pinch of baking soda, and 2–3 tablespoons of flour. To determine the right amount of flour, a little practice is needed. Start by adding 2 tablespoons of flour and knead the mixture. The dough should be soft and not stick to your hands.
Step 2
Take a small piece of the cottage cheese mixture, roll it into a ball, and flatten it in your palms. Now, coat this cheese pancake in flour and place it in the frying pan. Fry until cooked through and golden brown.
