Description

I should clarify that the carrots do not add flavor; they give a pleasant pink color to the product, and if a child hates carrots, this is a great way to sneak in some vegetables. Serve with sour cream and strawberry jam.

  • Egg white 2 pieces
  • Semi-soft cream cheese 35 oz
  • Carrot 2 pieces
  • Oat flakes 3 tablespoons
  • Salt to taste
  • Sugar to taste

Step-by-Step Guide

Step 1

Preheat the oven to 390°F.

Step 2

Place parchment paper on a baking sheet and grease it well with vegetable oil. Mix the cottage cheese (good quality! 5% fat) with finely grated carrots (you can chop them in a food processor), add the eggs and 2-3 tablespoons of flour (I prefer good breadcrumbs, oat or buckwheat flour), salt, and sugar. Possible additions include zest, vanilla, raisins, candied fruits, or poppy seeds.

Step 3

Knead the cottage cheese mixture thoroughly and shape into pancakes, placing them on the baking sheet.

Step 4

Bake until golden brown in convection mode for about 20 minutes, or in a regular oven for 30-40 minutes.
