Description
The pancakes are fluffy and you can feel the grains of cornmeal. Thanks to the cornmeal, the pancakes are very filling.
Ingredients
- Wheat Flour 5 oz
- Polenta 5 oz
- Activated Baking Soda 1 teaspoon
- Salt ½ teaspoon
- Sugar 5 oz
- Olive Oil 2 tablespoons
- Egg white 1 piece
- Milk 10 fl oz
Step-by-Step Guide
Step 1
In a large bowl, mix all the dry ingredients thoroughly. This will take about 30 seconds.
Step 2
In a smaller bowl, combine the oil, egg, and milk, and whisk with a fork. Add the wet ingredients to the dry ingredients and mix until smooth. The batter should be thick and not runny.
Step 3
On a dry, hot non-stick skillet, drop the batter by the tablespoon. Flip the pancakes as soon as bubbles appear. Cook for about 2-3 minutes on each side.
Step 4
Serve the pancakes with caramel sauce, chocolate topping, honey, or maple syrup.
