Description
Corn with cheddar is our take on the Mexican dish elote. First, we boil the corn, and then we grill it in a chargrill, or if we're cooking at home, in a dry skillet. The corn really needs a thick cheddar cheese sauce to make its flavor much more vibrant. Recipe by John Smith, chef at a popular American restaurant.
Ingredients
- Corn Cobs 4 pieces
- Cheshire Cheese 5 oz
- Cream 0 fl oz
- Grated Pecorino Pepato Cheese 0 oz
- Habanero Pepper 0 oz
- Shallot 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the corn for 45 minutes.
Step 2
Place the corn in the oven for 10 minutes at 355°F.
Step 3
Chop the cheeses into random pieces and melt them in a pan. Add cream to the cheese to create a thick sauce.
Step 4
Cut the corn into four pieces, skewer them, and dip in cheese.
Step 5
Garnish with grated pecorino cheese and finely chopped green onions.
